Sheep reach sexual maturity between 4-6 months of age. The meat that we refer to as "lamb" is harvested when the sheep is one year old and 100% full grown. Therefore, when you purchase pasture-raised lamb meat from our farm, you are purchasing an adult ram who is 1 year of age. The ewe lambs born on the farm are kept to restore the flock, while a single proven ram (an aggressive gent usually well over 2 years old) is kept for the breeding and guarding of those ewes.
Once they pass the one year mark, sheep meat is called mutton. For some reason, certain folks turn their nose up at the sound of mutton. However, this flavorful protein was popular in American cuisine until about 1950... not to mention the fact that mutton is a longtime staple of most ancient Celtic diets.
